Since 01/01/2006 the new EU hygiene package came into force and also the EU approval for commercial kitchens was adjusted (EU Hygiene Regulations (EC) 852/2004 and 853/2004).
Therefore licensing requirements hold for large-scale catering establishment institutions, which handle animal products and deliver more than a third of their range of products to other businesses. Liable to registration are delivering companies too even if they only deliver less than a third of their production but deliver to companies which are more than 100 km away. Crucial for admission are all aspects concerning hygiene and HACCP and the documentation of it.
